Let it simmer for a good 20-30 minutes, or until that chicken’s cooked through and the sauce thickens up a bit. While it’s cookin’, you can add a pinch of salt and pepper to taste. Don’t be shy, but don’t overdo it either.
Once it’s all cooked up and the chicken’s nice and tender, it’s time to serve it. You can serve this curry over some white rice, or even just on its own if you’re feelin’ low carb. The sweetness of the apples and the warmth of the curry mix together so nicely, it’s like a big ol’ hug in a bowl.
