Well now, if you’re lookin’ for somethin’ easy to cook up, that don’t need much fuss, I got just the thing for ya. You take some pork tenderloin, that’s the lean part of the pig, all tender and soft-like, and mix it up with peaches. Yeah, peaches. Might sound odd, but trust me, it’s real good. Don’t need a whole bunch of ingredients, just the basics, and you got yourself a meal that’ll make your mouth water. You might even want to share it, though I wouldn’t blame ya if you just kept it all to yourself.
Now, first thing you wanna do is get yourself some pork tenderloin. Don’t need a big ol’ chunk, just enough to feed the family, maybe a little extra if you’re feelin’ generous. Then, get you a couple peaches, ripe and juicy. Don’t matter if they’re fresh or canned, as long as they got some sweetness to ‘em. You can slice ‘em up or leave ‘em whole, whichever you fancy.
Step One: Take that pork tenderloin and get it nice and seasoned. I usually just use a little salt and pepper, but if you got some garlic or rosemary, throw that in too. Get your pan heated up, nice and hot, and cook that pork for a few minutes on each side ‘til it’s golden brown and cooked through. Don’t rush it, though, you want it tender, not tough as old boots.
Step Two: While the pork’s cooking, you can work on your peaches. If you’re using fresh ones, peel off the skin and slice ‘em up. If they’re canned, drain ‘em and just throw ‘em in a pan. You don’t need to do much with ‘em, just warm ‘em up, and maybe throw a little sugar on if they ain’t sweet enough on their own. You want ‘em soft, but not mushy. That little bit of sweetness from the peaches goes real good with the savory pork.
Step Three: Once the pork’s cooked and your peaches are soft, it’s time to put ‘em together. Just place that juicy pork on a plate, and spoon them peaches right on top. The sweet juice from the peaches mixes with the pork and makes a real nice flavor. You could even make a little sauce if you want, just use the juice from the peaches and cook it down ‘til it thickens up some.
Now, I know some folks might think pork and peaches don’t go together, but let me tell ya, it’s a match made in heaven. The savory meat and the sweet fruit balance each other out real nice. You can serve this up with some rice, or maybe some mashed potatoes on the side, and you got yourself a good ol’ country meal that ain’t too hard to make.
