- 1 small zucchini (chop it up small)
- 10 oz fresh spinach (wash it good, and give it a rough chop)

- About 200ml of heavy cream
- 1 cup shredded cheese (whatever melts good, mozzarella is nice)
- Salt and pepper, to taste
- Some tomato sauce (enough to cover them cannelloni in the dish)
Now, how we gonna make this:
First off, take a pan and heat up a little olive oil. Throw in that chopped onion and garlic, fry it till it smells good and starts lookin’ golden. Don’t burn it now, just a nice little sizzle. Then, add the zucchini and spinach. Cook that down till the spinach is all wilted, and everything’s nice and soft.
Now, time for the seafood. Toss in your shrimp, crab, or whatever you got, and cook it just a couple minutes till it ain’t raw no more. Don’t overdo it, we still got bakin’ to do later. Pour that tomato sauce all over them, make sure they’re nice and covered, or else they’ll get dry in the oven. Sprinkle some cheese on top – that’s what’s gonna make it all gooey and good.
Bake it up:
Cover the dish with some foil, and pop it into the oven. Bake it at about 375°F for 40-45 minutes. After that, take off the foil and let it cook for another 10 minutes or so till the cheese is all bubbly and golden brown. If it ain’t lookin’ like that, leave it in a bit longer. You want that top nice and crispy.
Serving time:
Once it’s out the oven, let it sit for a few minutes – it’s real hot! Then scoop it out onto plates. It’s gonna be rich, creamy, and just a little tangy from that tomato sauce. Perfect for a family dinner or even just yourself if you’re hungry enough. Leftovers heat up real nice, too!
