First thing you need is some chicken. You can use any kind you got, but chicken breasts are real good for this. Just make sure they’re thawed out, ‘cause if they’re frozen, it’ll take a while to cook, and we don’t got all day now, do we? You need about 4 pieces of chicken breast for a good-sized meal.
Next up, you’ll need some fresh asparagus. I reckon about a bunch or so, but don’t go overboard. Just enough to lay a few pieces right beside the chicken. Now, if you never worked with asparagus before, all you gotta do is snap off the bottom ends where it’s tough. Don’t be shy, it’ll snap right off. Then, cut ‘em into about 3-inch pieces, just right for layin’ around your chicken.
And don’t forget them mushrooms! You’ll need a good handful of fresh mushrooms – about 8 ounces or so. I like to use them button mushrooms, but any kind you got will do. Just slice ‘em up nice and thin. And if you like mushrooms, you can always add more, nobody’s stoppin’ ya!

Once that oil is hot, it’s time to get the chicken in. Season your chicken with a little salt and pepper, just to make it taste good. Then, place them chicken breasts in the skillet and let ‘em cook. You want ‘em to turn golden brown on both sides. Don’t rush it – give it a good 6 to 8 minutes on each side until the chicken is all the way cooked through. You don’t want no raw chicken, that’s for sure!
When your chicken’s all browned up, take it out and set it aside. Now, in that same skillet, toss in them mushrooms you sliced up. Let them cook for a couple minutes till they start gettin’ soft and a little browned around the edges. Add a little more olive oil if you need to, so they don’t stick. While them mushrooms are cookin’, get your garlic ready. I like to use about 2 cloves, and just mince ‘em up real fine. Toss that garlic in with the mushrooms, and cook it all together for another minute or two. Oh, the smell of that garlic, it’ll make ya hungry just standin’ over the stove!
Once the mushrooms and garlic are ready, it’s time to bring the chicken back into the skillet. Lay them chicken breasts right on top of them mushrooms and garlic. Then, add in the asparagus you cut up earlier. Lay them right around the chicken, and cover the whole thing with a lid. Turn the heat down to low, and let it cook for another 5 to 7 minutes, just long enough for the asparagus to soften a bit and the chicken to get nice and tender. If you like your asparagus softer, you can cook it longer, but don’t let it turn to mush!
Once that’s all done, you’re ready to serve it up! I like to serve this dish with a little rice on the side, or if you’re feelin’ fancy, you could go with some pasta. But if you’re like me, rice does the trick just fine. Now, you’ve got yourself a nice, simple meal with chicken, asparagus, and mushrooms all cooked up together in one pan. It’s a hearty, healthy meal that’ll fill ya right up and leave ya smilin’!
