Then, we need some bread crumbs. You can use the store-bought kind, or if you got old bread sittin’ around, just tear it up real small. You need about a cup of them crumbs. If you don’t got bread, you can use crackers too. Ain’t no big deal. Throw them crumbs right in with the salmon and shrimp.
Next, get yourself a red bell pepper. Cut it up into little pieces, real small like. I like the red one ‘cause it gives a nice color to the cakes. Put about a quarter cup of that in with your other stuff. If ya like a bit of a kick, you could throw in some green onion too, but that’s up to you.
Now, don’t forget about the lemon! You need some zest, just a little bit. Maybe about a teaspoon, just to give it that fresh taste. You don’t want it too strong, just a little hint of lemon. Mix that all in there real good.
Next step, you need an egg. Crack it right into the bowl, and stir it all together. This will help hold everything together. Don’t worry if it looks a little wet. That’s just how it’s supposed to be. You don’t want it dry like a biscuit.
Once you got that all mixed up, it’s time to form them cakes. Now, I just take a big spoon and scoop up a good amount, then press it into a patty shape. Make sure you got your hands a little wet, so the mixture don’t stick to ya too much. Set those patties aside on a plate while you heat up the pan.
I like to fry ’em in some oil, maybe a little bit of butter mixed in for flavor. Heat up your pan on medium heat, and once it’s good and hot, gently place them patties in there. You don’t wanna crowd the pan, so maybe do ‘em in batches. Cook each side for about 3-4 minutes till they’re nice and golden brown. You’ll smell ‘em when they’re done, that’s for sure.
When they’re all cooked up, take ’em outta the pan and set ‘em on a plate lined with paper towels. That’ll soak up any extra grease, so they don’t get too oily.
You can eat ‘em just like that, or if ya feel fancy, make yourself a little sauce to go with ’em. I like to mix some sour cream with a little lemon juice and dill. Tastes real good, and adds that little bit extra. But honestly, they’re just as good plain, too.
Now, I reckon you can serve these cakes however you like. Serve ‘em with a salad, or maybe put ‘em in a sandwich with some lettuce and a little mayo. Or, if you’re like me and don’t mind a big ol’ plate of food, have ‘em with some mashed potatoes or corn on the cob. Ain’t no wrong way to enjoy ‘em.
