- 1/4 teaspoon dried oregano
- 1 pinch red pepper flakes
- Salt and pepper to taste
- 2 cups milk
- 2 tablespoons flour

Step 1: Cooking the Seafood Filling
Grab a nice heavy pan, throw in about 3 tablespoons of butter. Get it melting over a low heat, ya don’t want it burning, okay? Now, add in the chopped shallot, carrot, and celery. Stir it up nice and slow till the veggies get soft – ‘bout 5-7 minutes should do it.
Now, toss in your chopped shrimp and scallops. Stir ‘em around just a few minutes, don’t cook ‘em too long, just till they’re a bit opaque, so they’re still tender after baking. Then sprinkle in that basil, oregano, and a pinch of red pepper flakes to add a little kick. Add some salt and pepper to taste, and that’s it. Set it aside for now.
Step 2: Mixing Up the Cheese Filling
Now get a big bowl. Put in the ricotta, provolone, and Parmesan cheese. Mix ‘em up real good. Then add the cooled seafood mix we just made into the bowl, and give it a good stir. Make sure everything’s combined well. This here’s gonna be our filling for the cannelloni.
Step 3: Making the Sauce

Step 5: Baking It All Together
Once ya got all the tubes stuffed and lined up, pour that warm sauce we made right over the cannelloni. Make sure it’s all covered up good so the pasta gets nice and soft in the oven. If ya like, sprinkle a bit more cheese on top.
Cover the dish with some foil so the tops don’t burn. Pop it in a preheated oven at 350°F (175°C) and bake it for about 30 minutes. Then take the foil off and let it bake another 10-15 minutes, just till it gets bubbly and a little golden on top.

Take it out of the oven and let it cool a few minutes before serving. Scoop ‘em out with a big spoon, and they’re ready to eat. This dish goes real nice with a simple salad or maybe some garlic bread.
