Once the chicken’s cooked through, you can add those veggies to the pan. Sprinkle in a little salt and black pepper, ‘bout a teaspoon of each, or to your taste. Stir it all together so that chicken and veggies start to get friendly. Let it cook for a few more minutes till them onions start to soften up, and you smell that nice, savory smell fillin’ the kitchen. It’s enough to make you want to eat it right then and there.
Now, it’s time to make the cobbler part—the topping! This is what makes it all come together. You gotta make a biscuit dough, and it don’t have to be fancy. You just need flour, some baking powder, salt, and cold butter. You can cut the butter into little pieces and work it into the flour with your fingers or a fork till it looks like crumbs. Then, you pour in some milk to bring it all together into a dough. Don’t make it too wet, just enough so it sticks together.
Now, spread that chicken and veggie mix into a baking dish, nice and even. You don’t want any lumps or bumps in it—just smooth and pretty-like. Then, take your biscuit dough and dollop it on top of the chicken. Just spoon it on there, don’t worry if it’s all perfect or not. Once you’ve covered the chicken, pop that dish into the oven at about 375°F for 20 to 25 minutes. You want that biscuit topping to rise up all golden brown and lookin’ mighty fine.
When you pull it out, you’ll see the chicken all bubbling up underneath, and that biscuit topping will be crispy and flaky on top. Just like the Red Lobster chicken cobbler, but you made it right there in your own kitchen, nice and easy.
If you really wanna get fancy, you can sprinkle a little cheddar cheese on top before you bake it. That cheese’ll melt all over and give it a nice flavor, kinda like the cheddar biscuits they serve with the meals at Red Lobster. You can even add a little garlic powder or herbs to the topping to make it extra tasty, if that’s your thing.
