Well now, if you ain’t tried that slow cooker chicken mole yet, let me tell ya, it’s somethin’ mighty fine! Real easy, too, like throwin’ stuff in a pot and forgettin’ about it ’til suppertime. You just get ya some chicken, get that slow cooker all ready, and in no time, you’ll have a dish that’ll make your mouth water like you just come in from the garden after workin’ all day.
First thing’s first, you need to grab yourself some chicken. Don’t matter if it’s chicken breasts, legs, or even them wings, just get what you got, and slap ’em right in that slow cooker. I always like to use about four or five pieces, enough to feed the whole family. Don’t worry about takin’ the skin off or anything, just toss ’em in there as is. And don’t forget the salt! You gotta sprinkle that salt all over the chicken like it’s rainin’ down, ‘cause it helps bring out that flavor, you see?
Now, here comes the good part: the mole sauce. Some folks think mole’s too fancy for them, but I’m here to tell ya, it ain’t hard at all. You get you some ancho chiles and pasilla chiles. You can find them at the store in the spice aisle or even in a big ol’ bag if you’re lucky. You want ‘em dried, so they got that smokey flavor. Just tear ‘em up and drop ‘em in a blender or food processor. Add a bit of water, and maybe a little broth if you want it richer, and whirr it up ’til it’s smooth.
Then, pour that mole sauce right over your chicken in the slow cooker. Don’t be shy now, make sure that sauce covers every little bit of chicken. You want it all coated good so the chicken soaks up that deep, rich flavor. After that, you just put the lid on, turn that slow cooker to low, and let it work its magic. You can leave it on for about 6 to 8 hours, and by the time it’s done, your chicken will be so tender, it’ll practically fall apart with the touch of a fork.
Some folks ask me if they can put raw chicken right in the slow cooker, and I say, “Of course you can!” Ain’t no problem with raw chicken in there, long as you let it cook slow and steady. If you rush it, sure, it might dry out a little, but if you give it the time it needs, the meat will be fallin’ off the bone, real juicy and tasty.
Once it’s ready, you can serve it up however you like. Some folks like to pile it up on a big plate with rice or some tortillas on the side. You can even make tacos out of it if you got some tortillas on hand. And don’t forget to drizzle that extra mole sauce all over it, cause that’s where the real flavor’s at!
Now, if you want to fancy it up a bit, you can add some toppings like chopped cilantro or a squeeze of lime. But truth be told, it’s mighty good just as is. The slow cooker does all the hard work for ya, so you can sit back and relax, maybe even take a nap while it’s cookin’.
So next time you’re feelin’ lazy or just want somethin’ easy and delicious, get yourself a slow cooker, a bit of chicken, and some mole sauce, and you’ll be eatin’ like a king (or queen, if that’s more your style!). It’s real simple, and I promise, your family will be beggin’ for seconds!
