Next thing you need is them tortillas. Now, there’s a lot of different kinds out there, but I stick with the simple corn tortillas. You just gotta heat ‘em up a bit in the pan or microwave so they’re nice and soft. Ain’t nobody wantin’ to eat a hard, dry tortilla, that’s for sure. Once they’re warm, you can cut ‘em up into pieces or just fold ‘em whole, whatever your fancy is.
Then, comes the fun part: buildin’ your layers! Now, I ain’t no expert, but I just start with a layer of tortillas at the bottom of a bakin’ dish. You can go with one or two layers, dependin’ on how much food ya wanna make. After that, throw in your cooked chicken. Don’t be shy, pile it in there nice and thick. And now, you gotta add some cheese – the more, the better! I like that melty cheddar cheese, but mozzarella works too if that’s what ya got. Just sprinkle it all over the chicken so it’ll melt real nice when you bake it.
Now, here’s where you can get a bit fancy if you want. You can add some beans, black beans or pinto beans, whatever you got on hand. They’re real good mixed in with the chicken and tortillas, and they give it some extra flavor and fill ya up. You can also toss in some salsa or even a few slices of jalapeños if you like a little heat.
Once you’ve got all that good stuff in your dish, just pop it in the oven for about 20 minutes or so, just enough to melt that cheese and get everything bubbly. When it comes out, oh boy, it’ll smell so good, you won’t even be able to wait to eat it! You can top it off with some sour cream or guacamole if you got it. Makes it even better, I tell ya.
Now, if you ain’t feelin’ like doin’ all the work, you can always make it into a casserole, where you just keep stackin’ tortillas, chicken, beans, and cheese till you’re all out of ingredients. Toss it in the oven and forget about it for a while – that’s the kind of meal I like: simple and easy, no fussin’ around. If you got some extra time, you can even make it the day before and just heat it up when you’re ready to eat. Ain’t no shame in that!
